These Keto cheesecake brownies with thick cheesecake swirl are a perfect dessert for when you can’t decide between a cheesecake or brownie as it combines the best of two desserts while remaining keto-friendly and healthy!

  • For The Batter:
  • Classic monkfruit sweetener – 1 ¼ cup

  • Eggs, at room temperature – 3

  • Unsalted butter – ¾ cup

  • Baking chocolate, unsweetened – 4 ounces

  • Almond flour – 1 cup

  • Baking powder – 1 teaspoon

  • Vanilla extract – 1 teaspoon

  • Sea Salt – ¼ teaspoon

  • For The Cheesecake Swirl:
  • Cream cheese, at room temperature – 8 ounces

  • Classic monkfruit sweetener – ¼ cup

  • Egg, at room temperature – 1

  • Vanilla extract – 1 teaspoon


  • Start by preheating the oven to 350 F.
  • Cover the bottom and sides of an 8 inches square pan with parchment paper then place it aside.
  • To prepare the brownies, place the chocolate and butter in a heat proof bowl then melt them in the microwave for 30 sec at a time. Microwave them for 30 seconds, then pull them out and stir them, then microwave them again for another 30 sec. Keep doing it until they fully melt. This method will prevent it from burning. Or use a double boiler.
  • Place the melted chocolate aside and let it cool down for 5 minutes.
  • Transfer the chocolate and butter mix to a large mixing bowl, then add to them the classic monkfruit sweetener and whisk them until the sweetener melts.
  • Add in the vanilla extract and mix them well, then add the eggs gradually one at a time while whisking until the mixture becomes smooth.
  • Combine the almond flour with salt and baking powder in a mixing bowl, and combine them well.
  • Add them to the chocolate mixture gradually while mixing all the time until it becomes smooth and they are no lumps in it.
  • Pour 2/3 of the brownies mixture into the baking pan then place it aside.
  • To prepare the cheesecake layer, combine the Classic monkfruit sweetener with cream cheese, egg, and vanilla extract then combine them well until they become smooth.
  • Swirl the cheesecake mixture on top of the brownie layer, the swirl on top of it the remaining brownie mixture.
  • Use a knife or a toothpick to slightly mix the two mixtures together.
  • Transfer the cheesecake brownies pan to the oven and bake it for 18 to 24 minutes until the center sets. You can do it by inserting a knife or a toothpick into the center of the cheesecake brownies, it needs to comes out clean.
  • Once the cheesecake brownie is baked, gently remove the brownie from the pan using the parchment paper and slide it to a cooling rack, then let it cool down completely.
  • Once the brownies are cool down, slide them into wedges or squares and transfer them to the refrigerator.
  • Allow the brownies to sit in the fridge until you are ready to serve them and enjoy!

Points To Know:

  • For the best results, always make sure all your ingredients are at room temperature. This will make sure they combine easily and better.
  • To ensure your cheesecake brownies are not overbaked, start checking them at the 16 minutes mark. Insert a toothpick or a knife in the center all the way to the bottom of the pan then pull it out. If it comes out with a bit of dough sticking to it, it will mean that it’s not baked yet, so you need to give it few more minutes. If it comes out clean, it means your brownies are ready.
  • Make sure the brownies are completely cool down to room temperature. It will help them set and become firmer and easier to slice. If you slice them while they’re warm, they will easily break.
  • Temperature differs from an oven to another, so it is essential that you start testing the cheesecake brownies at the 15 or 16 minutes mark, because for some 16 minutes will be enough, and for others, they might need up to 24 minutes.


How To Store Keto Cheesecake Brownies?

You can store these keto cheesecake brownies in the fridge in a container for up to 5 days.

If you wish to freeze them,  line up the bottom of a container with wax paper and place it in it the cheesecake slices. Cut a wax sheet into pieces then place each piece between two slices of cheesecake to prevent them from sticking to each other when they freeze. They can last for up to 3 months. Keep in mind though that the longer you leave them in the freezer, the more it will affect their taste.

To defrost the keto cheesecake brownies, allow them to sit in the fridge for at least 8 to 12 hours. Some cheesecakes brownies might take longer, so if you need to serve them the next day, make sure to place them in the fridge at night so they can have enough time to thaw.

Can I Use Coconut Flour For Keto Cheesecake Brownies?

Absolutely! In the recipe above, I used almond flour, but you can substitute it with coconut flour. The taste will no be the same especially because the coconut flour will add its nutty tropical flavor to the brownies, so I highly recommend trying it with a small batch first.

Can I Use Erythritol For Keto Cheesecake Brownies?

I highly recommend using the classic monk fruit sweetener because it’s very healthy and goes well with this recipe, but you feel free to substitute it with any other keto sugar of your choices such as erythritol, swerve, or Xylitol. Just make sure to check the amount correct to substitute because the sweetness of these sugars differs as some of them are sweeter than others.
