  • For The Crust:
  • Graham crackers – 1 ½ cup

  • Butter, unsalted and melted – ½ cup

  • Pecans, toasted and finely chopped – ½ cup

  • Granulated sugar – ½ cup

  • For The Filling:
  • Cream cheese, at room temperature – 16 ounces

  • Eggs – 2

  • Granulated sugar – ¾ cup

  • Vanilla extract – 1 teaspoon

  • Cinnamon powder – ½ teaspoon

  • For The Snickerdoodle:
  • All purpose flour – 2 cups

  • Granulated sugar – 1 ½ cup

  • Butter, unsalted and at room temperature – ¾ cup

  • 1 egg

  • Pecans, toasted and finely chopped – ¼ cup

  • Baking powder – 1 ½ teaspoon

  • Vanilla extract – ¾ teaspoon

  • Cinnamon powder – ½ teaspoon

  • Salt – ¼ teaspoon

  • For The Snickerdoodle Topping:
  • Brown sugar or granulated sugar – ¼ cup

  • Cinnamon powder – 1 teaspoon


  • Start by preheating the oven to 350 F.
  • Line up a 13 inches long baking dish with some parchment paper, then place it aside.
  • To prepare the crust, place the graham crackers in a food processor then pulse them several times until it becomes crumbly.
  • Add to it the toasted pecans with sugar, then pulse them several times again until the mixture is well combined.
  • Pour the melted butter into the food processor then blend them well until the mixture resembles wet sand.
  • Transfer the crust mixture to the lined-up baking dish then press it down until it covers the whole bottom of the baking dish, then let it chill in the fridge while preparing the cheesecake filling.
  • To prepare the cheesecake filling, combine the eggs with vanilla extract, sugar, cream cheese, and cinnamon powder in a large mixing bowl, then beat them with a hand mixer or a stand mixer until the mixture becomes smooth and creamy.
  • Spoon the cheesecake filling mixture over the cheesecake crust then spread it over the crust until it covers it completely and smoothes it down then place it aside.
  • To prepare the snickerdoodle layer, combine the butter with sugar in a large mixing bowl, then beat them for 2 to 3 minutes until they become creamy.
  • Add to them the salt with vanilla extract and egg, then beat them again until they become well incorporated and creamy for 2 to 3 minutes.
  • When done, add the cinnamon powder with flour to the mixture then continue to beat them until the mixture becomes smooth and no lumps are found.
  • Gently fold the chopped pecans into the batter, then spoon the mixture over the cheesecake filling layer, and smooth it down until it covers it completely evenly.
  • To prepare the snickerdoodle topping layer, mix the cinnamon powder with sugar in a small bowl then sprinkle it all over the cheesecake.
  • Transfer the cheesecake to the oven then bake it for 32 minutes until the crust is golden brown, and if you insert a toothpick or a knife into the cheesecake, it should come out almost clean.
  • Once the time cheesecake is done, turn off the oven and leave it cracker for 10 minutes, then remove the cheesecake from it and allow it to cool down completely on your kitchen counter.
  • Once the cheesecake is cooled, transfer it to the fridge and chill it for at least 6 hours overnight.
  • The next day, slice your cheesecake, then serve it and enjoy!

Points To Know:

  • If you don’t have a food processor to ground the biscuits, you can simply put them in a ziplock bag, then run over it with a rolling pin several times until the biscuits are crushed.
  • If you are not a fan of graham crackers, you can use digestive biscuits instead or ginger biscuits.
  • You must make sure all your ingredients especially the butter and cream cheese are at room temperature before you use them, because if they’re not, they will cause your cheesecake bars to crack, and they won’t taste as good.


How Can I Store These Snickerdoodle Cheesecake Bars? 

You can easily store these snickerdoodle cheesecake bars in the fridge for up to 4 days. All you have to do is wrap the cheesecake bars in plastic wrap or zip lock bags gently and cover them with foil, then put them in a heavy container. You can freeze it for up 3 months. Make sure to consume them before the 3 months are up because their quality will start to degrade and they won’t taste the same if you leave them longer.

To defrost them, you just have to transfer them from the freezer to the fridge and let them sit for at least 8 to 12 hours. Some cheesecakes might take longer, so if you need to serve them the next day, make sure to place them in the fridge at night so they can have enough time to thaw.
