Ingredients

  • For The Crust:
  • Graham crackers – 1 ½ cup

  • Butter, unsalted and melted – ½ cup

  • Pecans, toasted and finely chopped – ½ cup

  • Granulated sugar – ½ cup

  • For The Filling:
  • Cream cheese, at room temperature – 16 ounces

  • Eggs – 2

  • Granulated sugar – ¾ cup

  • Vanilla extract – 1 teaspoon

  • Cinnamon powder – ½ teaspoon

  • For The Snickerdoodle:
  • All purpose flour – 2 cups

  • Granulated sugar – 1 ½ cup

  • Butter, unsalted and at room temperature – ¾ cup

  • 1 egg

  • Pecans, toasted and finely chopped – ¼ cup

  • Baking powder – 1 ½ teaspoon

  • Vanilla extract – ¾ teaspoon

  • Cinnamon powder – ½ teaspoon

  • Salt – ¼ teaspoon

  • For The Snickerdoodle Topping:
  • Brown sugar or granulated sugar – ¼ cup

  • Cinnamon powder – 1 teaspoon

Directions

  • Start by preheating the oven to 350 F.
  • Line up a 13 inches long baking dish with some parchment paper, then place it aside.
  • To prepare the crust, place the graham crackers in a food processor then pulse them several times until it becomes crumbly.

  • Spoon the cheesecake filling mixture over the cheesecake crust then spread it over the crust until it covers it completely and smoothes it down then place it aside.
  • To prepare the snickerdoodle layer, combine the butter with sugar in a large mixing bowl, then beat them for 2 to 3 minutes until they become creamy.
  • Add to them the salt with vanilla extract and egg, then beat them again until they become well incorporated and creamy for 2 to 3 minutes.
  • When done, add the cinnamon powder with flour to the mixture then continue to beat them until the mixture becomes smooth and no lumps are found.
  • Gently fold the chopped pecans into the batter, then spoon the mixture over the cheesecake filling layer, and smooth it down until it covers it completely evenly.
  • To prepare the snickerdoodle topping layer, mix the cinnamon powder with sugar in a small bowl then sprinkle it all over the cheesecake.
  • Transfer the cheesecake to the oven then bake it for 32 minutes until the crust is golden brown, and if you insert a toothpick or a knife into the cheesecake, it should come out almost clean.
