Ingredients

  • For Crust
  • Margarine or butter – 3 tablespoons (melted)

  • Graham crackers crumbs – 1 cup

  • Granulated or Equal Spoonful – 2 tablespoons

  • For Filling
  • Low fat cream cheese – 8 ounces

  • Egg whites – 2

  • Full egg – 1

  • Granulated or Equal Spoonful – 2/3 cup

  • Lime peel – (1/2 teaspoon (grated)

  • Fresh lime juice – 3 tablespoon

  • Grated lime peel – for garnishing (optional)

  • First, take graham crackers and put them in the food processor with the butter. Make them into a crumb mixture.
  • Take an 8” circle shaped cake pan or 8” springform pan and put the butter and crumbs mixture in it. Smoothen it out by pressing with fingers.
  • Preheat the oven to 325 degrees F or 160 degrees C. bake the crust for 8 minutes and let it cool by placing it on the wire rack.
  • Beat cream cheese in a mixing bowl until soft and fluffy. Add the sweetener you are using as the substitute of sugar and blend it well. Using an electric beater will be a great idea here. After that, add in lime peel, juice, and egg whites and keep blending. Now add the egg and beat it well.
  • Spread this cream cheese mixture evenly in the baking pan over the cheesecake crust. Put it again in the oven to bake for 30 minutes. Do the knife test in the center of the cake to see if it is completely baked.
  • Put the cake on a wire rack to cool down. After it reaches room temperature, loosen the cake from the edges of the pan using a metal spatula.
