Ingredients

  • For The Crust:
  • All purpose flour – 1 cup

  • Granulated Sugar – 1/3 cup

  • Butter, at room temperature – 6 tablespoons

  • Vanilla extract – 1 teaspoon

  • Salt – a pinch

  • For The Filling:
  • Cream cheese, at room temperature – 16 ounces

  • Camembert Cheese, at room temperature – 8 ounces

  • Granulated sugar – ½ cup

  • Eggs, at room temperature – 2

  • Vanilla extract – 1 teaspoon

Directions

  • Start by preheating the oven to 350 F.
  • To prepare the crust, combine the butter with sugar in a large mixing bowl then beat them until they become light and fluffy.
  • Add the vanilla extract then combine them well. Add the salt with flour then beat them well until the mixture becomes crumbly like wet sand.
  • Line up a 9 inches springform pan with parchment paper then grease it with some butter or a cooking spray.
  • Transfer the crust mixture to the springform pan then press it down firmly to the bottom of the pan using your hands, then smooth it down with a glass.
  • Transfer it to the oven then let it bake for 14 minutes until it becomes light golden.
  • Once the time is up, place the crust aside and let it cool down completely.
  • To prepare the filling, combine the sugar with cream cheese in a large mixing bowl then beat them until they become light and fluffy.
  • Add the eggs gradually one at a time while mixing them the whole time until the mixture becomes smooth and creamy.
  • Discard the ring from camembert cheese then slice it into ½ inch pieces. Add it to the cream cheese mixture with vanilla extract then mix them well until the mixture becomes lumpy.
  • Pour the cheesecake filling over the crust and smooth it down with a spoon or the back of a spatula.
  • Transfer the cheesecake to the oven and let it bake for 26 minutes.
  • Once the time is up, wet a knife with hot water, then run it along side the edges of the cheesecake to loosen it.
  • Set it aside and let it cool down completely then transfer it to the fridge and let it sit for an overnight.
  • Top your cheesecake with some fresh fruits to balance the texture and taste of the cheesecake and enjoy!

  • When mixing the filling, you need to be gentle and use a spatula. Make sure to not overmix it as well because it will cause the cake to crack, also make sure to scrape the sides of the bowl while mixing.
  • For the best results, always make sure that all your ingredients are at room temperature. This will enable them to mix better and your cheesecake will turn out smooth and creamy. So always put the ingredients at least 1 hour on the kitchen counter before you plan to start baking.

It’s the perfect crust for this cheesecake and it is the crust that is used in France mostly for this cheesecake as well.

I always encourage making changes and your personal touches to what you cook so you can just have fun with it, but I also recommend trying the original recipes first, because for example this french style cheesecake will taste much better with the flour crust, and it actually very easy to make and doesn’t take much time. Not to mention that the end results are just perfect!
