Ingredients

  • For The Batter:
  • Classic monkfruit sweetener – 1 ¼ cup

  • Eggs, at room temperature – 3

  • Unsalted butter – ¾ cup

  • Baking chocolate, unsweetened – 4 ounces

  • Almond flour – 1 cup

  • Baking powder – 1 teaspoon

  • Vanilla extract – 1 teaspoon

  • Sea Salt – ¼ teaspoon

  • For The Cheesecake Swirl:
  • Cream cheese, at room temperature – 8 ounces

  • Classic monkfruit sweetener – ¼ cup

  • Egg, at room temperature – 1

  • Vanilla extract – 1 teaspoon

Directions

  • Start by preheating the oven to 350 F.
  • Cover the bottom and sides of an 8 inches square pan with parchment paper then place it aside.
  • To prepare the brownies, place the chocolate and butter in a heat proof bowl then melt them in the microwave for 30 sec at a time. Microwave them for 30 seconds, then pull them out and stir them, then microwave them again for another 30 sec. Keep doing it until they fully melt. This method will prevent it from burning. Or use a double boiler.
  • Place the melted chocolate aside and let it cool down for 5 minutes.
  • Transfer the chocolate and butter mix to a large mixing bowl, then add to them the classic monkfruit sweetener and whisk them until the sweetener melts.
  • Add in the vanilla extract and mix them well, then add the eggs gradually one at a time while whisking until the mixture becomes smooth.
  • Combine the almond flour with salt and baking powder in a mixing bowl, and combine them well.
  • Add them to the chocolate mixture gradually while mixing all the time until it becomes smooth and they are no lumps in it.
  • Pour 2/3 of the brownies mixture into the baking pan then place it aside.
  • To prepare the cheesecake layer, combine the Classic monkfruit sweetener with cream cheese, egg, and vanilla extract then combine them well until they become smooth.
  • Swirl the cheesecake mixture on top of the brownie layer, the swirl on top of it the remaining brownie mixture.
  • Use a knife or a toothpick to slightly mix the two mixtures together.
  • Transfer the cheesecake brownies pan to the oven and bake it for 18 to 24 minutes until the center sets. You can do it by inserting a knife or a toothpick into the center of the cheesecake brownies, it needs to comes out clean.
  • Once the cheesecake brownie is baked, gently remove the brownie from the pan using the parchment paper and slide it to a cooling rack, then let it cool down completely.
  • Once the brownies are cool down, slide them into wedges or squares and transfer them to the refrigerator.
  • Allow the brownies to sit in the fridge until you are ready to serve them and enjoy!

Just make sure to check the amount correct to substitute because the sweetness of these sugars differs as some of them are sweeter than others.
